SUPER SALMON AND EGGCELLENT EGG CUPS RECIPE!

The number one reason I hear for not eating breakfast and for eating crap is "I don't have time"

Well, good news! I am here to tell you that reason, that excuse (Because thats what it is) is BS. The real nasty hard hitting truth of the words "I don't have time" is actually "I don't make time for healthy eating"

Peeps think that eating healthy is a full time job but in reality it doesn't take  huge amounts of time and effort. Im all about Bish Bash Bosh in the kitchen, I like to eat well but I do not like spending hours cooking.

And that is what this recipe is all about. Its fantastically fast to make, delicious and is packed full of protein and good fats. Add a bit of greenery to your plate and you have a super well balanced meal in seconds. 

If you don't like Salmon then just replace with Bacon or Chorizo or if you are a herbivore throw in some feta and olives for a mediterranean style veggie cup.


Ingredients:

Salmon x 1/2 kg Frozen/Fresh or Smoked (Frozen is cheapest and defrosts well-thats what I use)

Egg Whites x 1 Cup

Herbs - I use Dill but you could use any flavour you like

Method:

Spray a 12 cup muffin tray with oil or use liner cups.

Chop or shred the salmon in a big bowl. Add the egg whites, salt and pepper and half the herbs and mix well.

Divide the mixture between the 12 cups but only fill about 1/3 of the way up - you may have a little leftover. (I just use the leftovers to make a little salmon omelette :-)

Break an egg on the top of each filling the cup to the top. Garnish with the rest of your herbs and some salt and pepper. Bake in the oven for about 20 minutes or half an hour.

Pop in the fridge. They'll last for 4 or 5 days. Add some veggies or salad and voila!

Don't ever utter the words "I don't have time" again. You just made 12 snacks or 6 meals in less time than it would take to order and pick up a pizza, your a bloody culinary whizz!
